THE COTSWOLDS is showcasing its range and standard of cuisine and food and drink producers in the new book being published this month.

The publication – The Cotswold Cook Book – celebrates a fantastic array of independent restaurants, cafes, pubs, delis, producers and suppliers.

It also features more than 40 recipes – some from prestigious chefs like David Everitt-Matthias who runs two Michelin star Le Champignon Sauvage Restaurant in Cheltenham; Cotswold Chef of the Year winner Richard Craven who is chef at the Chef’s Dozen, Chipping Campden; and 2016 MasterChef: The Professionals contestant Wayne Sullivan, head chef at The Old Stocks Inn in Stow-on-the-Wold.

The recipes have been provided exclusively for the book and are described as “achievable” by all home cooks. The book also serves as a guide for all the best places to go in the Cotswolds and offers an insight into some of the drinks produced in the region. The Sweet Potato Spirit Company in Evesham and the Cotswold Distillery at Shipston-on-Stour are among those mentioned.

Each chapter of the book focuses on a delicious and unique recipe and the stories behind each food business.

David Everitt-Matthias, who shares his recipe for chocolate and walnut oil ganache with roasted pears, said: “It's been a pleasure taking part in The Cotswold Cook Book. The book celebrates some of the best in the region from a high end Indian restaurant to a great local distillery and farmers market. Enjoy the book and get cooking.”

Alex Edgecombe, from bespoke private catering company The Little Pickle based in Moreton-in-Marsh, said: “We are truly thrilled to be featured in The Cotswolds Cook Book, we live and work in an absolutely fantastic region with some brilliant chefs and food businesses.

“Since we set up The Little Pickle just over two years ago, we’ve been cooking our way around all corners of the Cotswolds and we’ve enjoyed every second of it.”

The Little Pickle contributed its recipe for gin and beetroot cured salmon with beetroot slaw and salmon croquettes.

Executive chairman of Cotswold Taste, an organisation set up to promote food and drink from the Cotswolds and ensure high standards, Nick Waloff said: “The Cotswolds region produces great food and drink, and The Cotswolds Cook Book is a truly spectacular romp through some of the best of the best. Cotswold Taste is very pleased to be a part of the action.”

The Cotswold Cook Book is published on Wednesday March 22 and will be available from all the businesses featured in its pages, selected local gift shops and bookshops, as well as online.
